The wind shakes, rocks, moves, and without any discrimination it touches everything it encounters along the path. So does Jento, a lively white from Malvasia grapes obtained from a second natural fermentation, a promise of effervescence and aromaticity.
After the first fermentation, the wine is ready for the second one in autoclave at controlled temperature and pressure, started by the addition of selected yeasts and sugars.
Straw yellow colour enriched with a lively foam and a subtle perlage. Intense and fruity on the nose, fresh and harmonious on the palate, with a pleasant soft note. Best served with delicate fish-based appetizers. Excellent with tempura vegetables.
