The harvest is strictly manual in crates, in favor of the meticulous selection of the best grapes. In natural wine-making, the maceration of the skins is at controlled temperature in cement vats for 8-10 days. The wine ages for 12 months, partly in cement vats and partly in American oak barriques; it follows the aging in the bottle for at least 6 months. Intense and lively ruby red color, it takes on grenade shades with aging. The scent is very characteristic, sweet and kind, with notes of tobacco, spices and coffee. The taste is dry and savory, soft and harmonious, with fruity flavors of blackberries and plums.
Ideal with grilled red meats, boiled meats, poultry and rabbits, roasts and semi-aged cheeses.
